Our New Longhorn Cattle

Texas LonghornWe are pleased to introduce our new herd of Texas Longhorns. Texas Longhorns have flavourful meat. We raise them ourselves on local open rangeland.  Our Longhorn Beef is available by order in quarter, half or whole animal quantities.

About Texas Longhorns

Longhorns were the first cattle brought to the new world by Christopher Columbus and Spanish colonists.  For over two centuries they became mostly feral on the open ranges in Texas.  Due to this they developed very hardy, drought resilient characteristics seen in today’s Texas Longhorns.  They are a smaller animal than more common cattle, but as a result do not need assistance with calving.  The meat is very flavourful.

South African Boerewors

We are pleased to announce that we are now making and offering South African Boerewors Sausage.  It is a very lean sausage made from pork and beef.  Spices include thyme, coriander and black pepper.  It is made as a long coil and best grilled outdoors on the barbecue.

In South Africa, the preparation and grilling of boerewors has become a fine art with many local, regional and national competitions each year.  It is also popular in Namibia, Botswana, Zimbabwe and Mozambique.  Enjoy!

Buffalo / Bison Jerky

Bison Buffalo Jerky Canada

We are pleased to be offering all natural Bison Jerky. Prepared from Canadian Bison from Alberta and BC it is hot smoked and flavored with our special seasoning (which is M.S.G free).

Bison jerky has less fat and is firmer than beef jerky.

You might also hear Bison meat referred to as Buffalo meat here in North America.  Interestingly, the animal we call the buffalo in North America is actually a bison.  True “Buffalos” are from Africa and South Asia, while Bison are native to North and South America and parts of Europe.

South African Biltong & Droëwors

Biltong, Cranbrook, Kimberley, BC

This spring we are happy to announce that we have started making South African Biltong and Droëwors.

A South African person living in the East Kootenay asked if we could make their favorite meats from home, as sadly our local biltong makers in Cranbrook have closed.

Droëwors is a thinner type of dried sausage that contains coriander spices and beef.  It is a popular South African snack food and is similar to the traditional boerewors sausage, but using beef instead of pork and veal.  It is a naturally cured sausage without curing agents.

Biltong is a South African style of jerky with Dutch origins. Beef is seasoned with spices including coriander, black pepper, brown sugar and salt.

Landjaeger, made in the Kootenays!

Landjaeger, or Landjäger,  is a semi dried sausage that keeps well without refrigeration. It is a perfect snack food for hiking and historically was carried by soldiers.

The taste is similar to dried salami, and it can also be cooked or added to meals.

At Gwinner’s, we make our Landjaeger with beef, pork with lard, red wine and spices. Before they are smoked and dried we press them into a rectangular shape.

Landjaeger is traditionally made in Southern Germany, Austria, Switzerland and Alsace.  The French name is “gendarme”.
